I love easy recipes in the summer and this recipe is simplicity at its best! Quesadillas in general are absolutely divine but this really takes recipe really takes the stage! The filling cooks up to a cheesy, barbecuey, smokey goodness. A dip in ranch dressing really tops this off. I like to use leftover grilled chicken for the filling in these, but any leftover or cooked chicken will do. Be creative with the shredded cheeses you use! I like to use mozzarella, cheddar, and Swiss. I usually like to use a grill for cooking these on, but I have used a griddle (when we get cravings in the winter!) and it also works great. When you cook these make sure to press down on the quesadilla with a spatula, as this helps make it more compact and easier for cutting and serving.
- In a bowl combine the shredded & cooked chicken with the barbecue sauce. Place about ⅓ to ¼ cup chicken mixture onto a flour tortilla. Sprinkle with shredded cheese and top with another tortilla. When quesadillas are all prepared, lightly mist the outside of tortillas with oil. Cook on a hot grill or griddle until both sides are lightly browned and inside is cooked. While cooking press down on quesadilla with a spatula. Remove from grill/griddle and cut into triangles. Serve with ranch dressing.
